What kind of pasta machine is that?

If that is out of your budget, but you have a Kitchenaid, the pasta roller attachment works just fine.  I don't have a Kitchenaid so I could not demonstrate that to you, but I have used them, and also got the attachment for my Daughter in Law.  There are also other systems similar to this made by other manufacturers that I am sure would suffice.  I do not recommend the extruder types, the noodles come out "shaggy" so they don't generally cook up smooth.  I do recommend, however, the Motor Attachment for the Marcato Atlas Multipast 150.

(You don't need a motor attachment for this as it uses the motor in the Kitchenaid)

How do you clean and store the pasta machine?

Take a textured paper towel and set the pasta machine to the thickest setting and run the towel through, dial down to the next thickness and run the towel through.  Continue until you have gone from the thickest to the thinnest.  Do not dishwash, do not hand wash, do not get wet. Get a plastic tote container that will fit all of your pasta machine parts.  Put it away as soon as you are done using it.  This will keep dust and other icky things from messing up your rollers.

What do you mean by "broken sauce"

Sometimes when a sauce is heated for too long or overcooked, it becomes broken.  It's where the fat separates from the remainder of the sauce and it looks blotchy and unappealing.  Especially when it comes to hot emulsions, just adding a splash of heavy cream will help to keep the sauce bound.
