Cook Along Episode 3: Key Lime Pie Sugar-free with Alternates



Cook Along With Sivi Episode 3

Join us for Episode 3, Sugar-free Key Lime Pie with Jerry, Eddie and Jean.  

Below, you will find a list of ingredients and equipment that is needed for making this pie. We encourage you to cook along with our simulcast, which will be broadcasted live on Cooking with the Munchie Mafia Official, Butler Family Farm, Devildog and Meritage Shades of Light. Jerry and Susan are collecting the tips and tricks, and recipe to put into the Collective Cookbook. The recipe we will be using is from my Personal Cookbook, a compilation of recipes that I have developed over the decades. Scroll past the lists to get to the Fluff and Stuff. You will also find the alternate recipe, that is not sugar-free, for those that prefer to have the regular recipe.

EQUIPMENT NEEDED:
Pie Pan Wire Whisk 2 Bowls Rolling Pin, Mallet or Food Processor Oven Rubber Spatula Gloves are optional, Eddie Microplane Juicer INGREDIENTS NEEDED: 1 cup Allulose, or other sugar substitute of your preference. SEE NOTE BELOW 4 egg yolks 14 oz of sugar free sweetened condensed milk (some stores may not carry it, be aware you might need to order it) SEE NOTE BELOW 1 Stick Butter, melted Sugar Free Cookies (Shortbread) 20 Fresh Key Limes, you'll need a lot, and 1 bag of Key limes may result in less than 1 cup. OR bottle of key lime juice, you will need 1 cup SEE NOTE BELOW 1 regular lime for garnish Sugar free whipped topping, (I prefer Mexican Sour Cream) sour cream, or heavy whipping cream (your choice). If using heavy whipping cream, you'll need a mixer OR a whisk and another bowl (yes, Eddie, another bowl)

DIRECTIONS: Preheat Oven 350 degrees

  1. Crush your cookies, you will need roughly 1 3/4 to 2 cups of crushed cookies. Mix in 1 stick of melted butter, 1/2 cup of sugar substitute. Mix thoroughly and press into your pie pan. Place in oven for about 5 minutes.
  2. In a bowl, Take 1 cup of key lime juice, 1/2 cup of sugar substitute, zest from key limes, 4 egg yolks, and 14 oz sweetened condensed milk. Mix ingredients thoroughly and pour into pan.
  3. Bake on a sheet tray for approximately 17 minutes. (Ovens have variances, so you are going to want to check it before calling it good, does it jiggle and seem set in the middle? If not, put it back in the oven for 5 more minutes, and check again. If still not ready, continue baking in 5 minute increments until you have a set pie). The pie will continue to set as it cools. Occasionally, you may see some pooling on the top of the pie after it has cooled, this is normal and you can simply blot with a paper towel.
Allow to cool to room temperature, and then chill for at least 3 hours. Decorate before serving.

NOTE:

No two diabetics are alike.  With that being said, diabetics may see blood sugar spikes with certain sugar substitutes.  Use what you know works for you.  In the case of Sugar Free Sweetened Condensed Milk, Splenda is used.  Here are two recipes that you can make in advance:

3 Cups heavy cream
1 stick butter
1 cup sweetener of choice 
1/2 tsp vanilla extract (check your label as some extracts may contain sugar) - Optional.

Add first 3 ingredients to a sauce pan and over medium heat, stirring, bring to a high simmer.  Reduce temperature to LOW and allow to simmer for 40 minutes, checking consistency, it should be very thick, if not, allow to continue simmering.  Add extract (optional) and allow to cool.  Store in a jar in refrigeration for up to 7 days.


For dairy free Sugar-free Sweetened-condensed milk: 

Use canned full fat coconut milk, 2 cans (check label, some have added sugar)
1 stick vegan butter
1 cup sweetener of choice 
1/2 tsp vanilla extract (check your label as some extracts may contain sugar) - Optional.

Follow instructions above, except, store in a jar in refrigeration for up to 5 days.  If you are lactose intolerant but can have butter, use butter.  An additional alternative would be to substitute with Coffee Mate Plain Coffee Creamer or Sugar Free Vanilla Coffee Creamer.


For Egg Allergy:

Heat the key lime juice and zest in a double boiler, add 1 teaspoon of plain gelatin and a teaspoon of cornstarch, combine with your sugar substitute and sweetened condensed milk, stirring frequently until it begins to thicken. Add 1 cup of whipped cream cheese and whisk until thoroughly combined.  Pour into your baked crust and set into the refrigerator to set.  Refrigerate overnight is best practice.  Decorate when you are ready to serve.


Regular Recipe:

If you want to make this into a full sugar version.

CRUST:  
Substitute the sugar free cookies for graham cracker crumbs about 2 cups, 1/4 cup brown sugar, and melted butter, 6 tablespoons melted butter, combine and press into pan

FILLING:  
Substitute Sweetened Condensed milk sugar free for regular.  
Substitute the sugar substitute for regular 1 1/2 c granulated sugar.



Fluff and Stuff:

If you are like me and HATE recipe sites and blogs, you'll understand why I have Fluff and Stuff.  I want to simply get to the recipe and information quickly and don't need to read  the Bloggers whole life story, and their inspiration behind the recipe halfway through the subject material.  It drives me nuts when they break up the recipe with lengthy explanations, a ton of ads, and stupid nonsense to drag out word count, with information that may or may not be pertinent to the recipe.  So, I put my fluff and stuff at the bottom.  Some will read it, some will not, and it's okay either way.  If you've gone this far, thanks.

The inspiration behind Cook Along:

Timmy and Eddie are diabetic, while Jerry has recently found out that he is pre-diabetic and wants to do all that he can to keep from having to go through what Timmy and Eddie are experiencing.  Diabetes is a really rough disease that isn't simply a badly performing pancreas.  It may lead to other comorbidities - kidney, heart, and liver failure, as well as frequent infections that may lead to amputations, generally of the lower extremities.  It is a cause of blindness in some.  For women, they may experience frequent yeast infections, and pregnancy complications.  

These three men have led me down a rabbit hole. One of my potential projects was to do a Cook Along panel stream that can translate well to simulcasts as collaborative live content for and with other channels, and to create "best viewed on television" content.  I throw ideas out at Tyger quite a lot because usually I get a, "give it a try".  The idea was shoved into the far reaches of the to-do list, because I wasn't sure exactly how to execute this one.  I guess it was one of those things, there has to be the right time, and the right moment - something that Tyger frequently tells me as he's reeling me back from my future-tripping and steers me away from some ideas that maybe should just stay in the trashcan.  

As we were steering away from Streamyard and moved over to EV-Mux (Thanks, Eddie), the idea resurfaced and Jerry, Eddie and I talked about this - they brought up an idea and it just so happened to be this forgotten concept.  So, right time, right moment, right people.  Ding. Ding. Ding.  It was a similar concept that I pitched to The Food Boat a while back, but it never went anywhere.

They have inspired me to bring life to this project, as well as bringing forward my protected and secret recipes that I've held onto for quite some time in my personal recipe binder.  My recipes have been tested in commercial kitchens, and perhaps I will produce some bonus content in the future showcasing behind the scenes in specialty recipe development.
