Cook Along With Sivi Episode 3

Join us for Episode 3, Sugar-free Key Lime Pie with Jerry, Eddie and Jean.  

Below, you will find a list of ingredients and equipment that is needed for making this pie. We encourage you to cook along with our simulcast, which will be broadcasted live on Cooking with the Munchie Mafia Official, Butler Family Farm, Devildog and Meritage Shades of Light. Jerry and Susan are collecting the tips and tricks, and recipe to put into the Collective Cookbook. The recipe we will be using is from my Personal Cookbook, a compilation of recipes that I have developed over the decades. Scroll past the lists to get to the Fluff and Stuff.

EQUIPMENT NEEDED:
Pie Pan Wire Whisk 2 Bowls Rolling Pin, Mallet or Food Processor Oven Rubber Spatula Gloves are optional, Eddie Microplane Juicer INGREDIENTS NEEDED: Allulose, or other sugar free substitute of your preference. SEE NOTE BELOW 4 egg yolks 2 cans of sugar free sweetened condensed milk (some stores may not carry it, be aware you might need to order it - due to weather, give yourself ample time to get it in time). SEE NOTE BELOW 1 Stick Butter Sugar Free Cookies (Shortbread) 20 Fresh Key Limes, you'll need a lot. OR bottle of key lime juice 1 regular lime for garnish sugar free whipped topping, (I prefer Mexican Sour Cream) sour cream, or heavy whipping cream (your choice). if using heavy whipping cream, you'll need a mixer OR a whisk and another bowl LINKS TO PRODUCTS ON AMAZON:

NOTE:

No two diabetics are alike.  With that being said, diabetics may see blood sugar spikes with certain sugar substitutes.  Use what you know works for you.  In the case of Sugar Free Sweetened Condensed Milk, Splenda is used.  Here are two recipes that you can make in advance:

3 Cups heavy cream
1 stick butter
1 cup sweetener of choice 
1/2 tsp vanilla extract (check your label as some extracts may contain sugar) - Optional.

Add first 3 ingredients to a sauce pan and over medium heat, stirring, bring to a high simmer.  Reduce temperature to LOW and allow to simmer for 40 minutes, checking consistency, it should be very thick, if not, allow to continue simmering.  Add extract (optional) and allow to cool.  Store in a jar in refrigeration for up to 7 days.

For dairy free: 

Use canned full fat coconut milk, 2 cans (check label, some have added sugar)
1 stick vegan butter
1 cup sweetener of choice 
1/2 tsp vanilla extract (check your label as some extracts may contain sugar) - Optional.

Follow instructions above, except, store in a jar in refrigeration for up to 5 days.  If you are lactose intolerant but can have butter, use butter.  An additional alternative would be to substitute with Coffee Mate Plain Coffee Creamer or Sugar Free Vanilla Coffee Creamer.

Fluff and Stuff

If you are like me and HATE recipe sites and blogs, you'll understand why I have Fluff and Stuff.  I want to simply get to the recipe and information quickly and don't need to read  the Bloggers whole life story and their inspiration behind the recipe halfway through the subject material.  It drives me nuts when they break up the recipe with lengthy explanations, a ton of ads, and stupid nonsense to drag out word count, with information that may or may not be pertinent to the recipe.  So, I put my fluff and stuff at the bottom.  Some will read it, some will not, and it's okay either way.  If you've gone this far, thanks.

Timmy and Eddie are diabetic, while Jerry has recently found out that he is pre-diabetic and wants to do all that he can to keep from having to go through what Timmy and Eddie are experiencing.  These three men have led me down a rabbit hole and one of my potential projects was to do a Cook Along panel stream that can translate well to simulcasts as collaborative live content for other channels, and "best viewed on television" content.  They have inspired me to bring life to this project, as well as bringing forward my protected and secret recipes that I've held onto for quite some time in my personal recipe binder.  My recipes have been tested in commercial kitchens, and perhaps I will produce some bonus content in the future showcasing behind the scenes in specialty recipe development.

How does "Show Up Shout Out" Work?

The Outro on Cooking with the Munchie Mafia Official is a fun space  on the end of our livestreams.  This is where we showcase a Channel Creator randomly each week.  The Mods and Timmy collect the names of every channel creator that had visited our livestream for an undisclosed length of time (we don't tell anyone what that length of time is because some people stop in, say hi, and dip out just to get in the Outro). 

We run a race or spin a wheel with the channel names that are collected, and the winner is selected for the following week.  A screen cap of their channel is tranformed into a little cell phone and they are added to the OUTRO, a verse or two is added to the OUTRO about their channel - some are meant to be funny, while there are rare instances where something funny can't be made.  When the creator has visited frequently (also not disclosed because of the "drivebys"), and if they are active in the channel chat, they will be added to the group photo.  Group photos are updated monthly, as it takes time to create these avatars.  Avatars are periodically removed if the person does not appear for 3 months, at least once for a meaningful amount of time, exceptions are given if it's known that the person has not been online for various reasons.  These can't be child accounts, simply because of safety.

The avatar screen is also located on Official Unofficial Off Topic Squirrel, as well as the cell phones, but not the Outro song.

For faceless channels, we do our best in designing an avatar that suits the channel.

Additionally, those other channels that may not make appearances, but they reciprocate with shout outs on their channel remain in our Outro.

Welcome to my newly refurbished BLOG - an Introduction.

Hello and thank you for visiting my newly refurbished BLOG.  I promise this time that I will do better at keeping this updated.

I am the YouTube Content Creator for Cooking with the Munchie Mafia Official (@chefsivi) and The Unofficial Official Offtopic Squirrel (@offtopicsquirrel).  I cruise the YouTube streets and attend to as many livestreams as I can in my spare time.  

This is my events calendar for upcoming shows, so please check back frequently to see what exciting new episodes that I have scheduled.  Anything scheduled in advance is subject to change due to the volatility of my work schedule.  

I am excited to introduce a new Series:  Cook Along with Chef Sivi with Co-hosts:  Butler Family Farm 2005 and Devildog.  This new series is heading into Episode 3, Sugar-Free Key Lime Pie.  We are focusing on specifics for now as we begin to build the content for an actual cookbook; featuring Commercially-tested and proven recipes for Diabetics, Pre-Diabetics and others that are seeking to cut back on sugar in their daily diet.  There aren't many diabetic-friendly foods in the prepared foods market, so we are working on bringing you into our kitchens to watch a trained Culinarian teaching a how-to video in a fun and fresh perspective.  As Chef Auguste Gusteau said in the movie Ratatouille, "Anyone can cook".
