What happens when a Professional Chef from Washington and a Professional Chicken Chucker from Texas (he makes chickens literally cross the road) get together with grills, knives, questionable ideas, and absolutely no adult supervision?
Apparently… DINNER HAPPENS.
Beginning October 2026, GenX Cooks Left Unsupervised will be MULTISTREAMING on the 2nd and Last Wednesdays of the month. Sivi and Ed team up to whip up family favorites, regional mash-ups, backyard classics, and the occasional culinary experiment that probably should have been discussed with a responsible adult first. One is a Pro Chef from Washington. The other is a Professional Chicken Chucker from Texas. Together, they bring a casual, anything-goes approach to cooking and grilling—with just enough skill to make the chaos look intentional.
Can a Pro Chef teach an old dog new tricks? Can a Texas Chicken Chucker teach a culinary powerhouse a completely different way of looking at food? Will Texas and Washington agree on anything? Will they agree on how to cook the chicken? And, most importantly…
WHO GAVE THESE TWO PERMISSION TO COOK UNSUPERVISED?!
Expect family recipes, regional mash-ups, grilling, cooking, storytelling, GenX nostalgia, friendly trash talk, questionable culinary decisions, and the kind of kitchen chaos that happens when two people know exactly what they're doing…
and then decide to ignore the rules anyway.

First Up: Potato Soup, Because Apparently We’re Adults Now
Our first episode kicks things off with Potato Soup, because nothing says Welcome to Autumn quite like a big pot of something hot, hearty, inexpensive, and capable of feeding a small army—or at least a Gen-X family with leftovers.
This series is all about good food, questionable supervision, and two very different cooking perspectives coming together in the same kitchen. Sivi and Ed will be cooking side by side, bringing their own regional influences, experiences, and personalities to the table while making the kind of approachable, family-friendly food that doesn’t require a culinary degree, seventeen specialty ingredients, or a second mortgage.
And because we are firmly in the “I have responsibilities now, but I still remember when dinner came from a box” generation, many of the recipes will be freezer-friendly and perfect for meal prep. Cook once, eat several times. That's the kind of math we can get behind.
So, Who Are Ed & Sivi?
Sivi and Ed have been YouTube content-creator friends for about two years, and apparently neither one has learned when to say, “Maybe this is a bad idea.”
We've already teamed up for a multi-stream live production, The Blackstone Challenge Battle: Chicken Parmesan, and we've also cooked together during Cook Along with Co-Hosts Jerry and Eddie, including a sugar-free copycat version of Little Debbie Cream Pies.
Now we're taking things to the next level with Ed & Sivi's GEN-X Cooks Unsupervised.
Think of it as two Gen-Xers, two cooking styles, a whole lot of food, and absolutely no guarantee that anyone is going to behave.
Meet Ed: The Flamingo King of Texas
Ed is the man behind Whistlestop Kitchen & Grill, which is a secondary channel for Whistlestop Homestead.
When he isn't cooking, grilling, or apparently collecting an unreasonable amount of flamingo-related notoriety, Ed is working on something much bigger: building a tiny house on his Texas property.
His current home is his childhood home, and after many years of weather, time, and general “well, it's still standing” determination, the old house has seen considerably better days and is now dangerously close to becoming an outdoor floor plan.
So Ed is working toward a new chapter—literally building a tiny house and a new life on his property.
He lives in Texas with his beloved dog, Gypsy, who presumably serves as Head of Security, Quality Control, and Keeping Ed From Doing Anything Too Stupid.
And then there's the flamingos.
We aren't entirely sure how Ed became known as the Flamingo King, but at this point, the title has stuck. There may be no official crown. There may not even be an actual kingdom. But there are flamingos, and that's really all the evidence we need.
